
The perfect detox after the holiday season
The holidays are a time for festive fun and you’ll more than likely be eating and drinking and being merry, as you should. But it’s important to keep in mind that you can’t wreak havoc on your body and expect a year’s hard work to stay in place.
To keep the repercussions to a minimum you can try some easy diet and exercises tweaks and still have a ball.
Make sure you get at least 30 minutes worth of cardio exercise a day, even if it’s a brisk walk around your neighborhood or if you’re lucky enough, on the beach.
Here is the showstopper that should make all the difference, our quick, easy, delicious detox soup will leave you satisfied and will leave your body happy and healthy.
Veggie Detox Soup
Here is what you need to make 16 cups:
- 1/2 red onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon extra-virgin olive oil
- 3 cups water or veggie stock
- 4 cups chopped veggies (I generally use a mixture of sweet potato, celery, cauliflower, tomato and jalapeño.)
- 2 tablespoons hot sauce
- 1 teaspoon red pepper flakes
- 1 teaspoon black pepper
- 1 teaspoon curry powder
- 1 teaspoon chili powder
- 1 teaspoon sea salt
- 1 cup coconut milk
Method:
Sauté the onion and garlic in the olive oil in a large soup pot, add the water or veggie stock, stir in the veggies, hot sauce and spices. Bring the mixture to a boil and then turn down to low heat and simmer for 30 minutes. Stir in the coconut milk and simmer for 10 more minutes. Enjoy blended or as is!
